Dumplings are one of the most recognizable dishes of Russian cuisine. There are many different kinds of pelmeni – Siberian, Moscow, Ural. However, all dumplings are united by their unique taste and flavor.
Nowadays, most people prefer to buy dumplings in stores. The fact is that it takes a long time to cook dumplings. Especially if you need to prepare a batch for a large family. But, in the past, this is how they used to prepare homemade dumplings. This activity united generations at the table.
The father of the family was engaged in minced meat for the dish, women kneaded the dough, and children molded dumplings. By the way, until now, homemade dumplings are still tastier than store dumplings.
Let’s prepare chicken homemade dumplings at home.
Ingredients of dough for dumplings:
- Flour – 1250 g;
- Water – 500 g;
- Egg – 3 pcs;
- Salt – 10 g.
Ingredients for stuffing:
- Chicken – 900 g;
- Onion – 300 g;
- Garlic – 20 g;
- Salt – 12 g;
- Ground black pepper – 5 g;
- Cream – 100 g.
Preparation of dumplings:
Pour flour on the table, form a depression, where we pour water. Break eggs into the crater, pour salt and knead the dough with your hands.
Form a lump, which we remove under the bowl for 5 minutes. Then knead the dough again for a minute.
For the filling, pass chicken meat through a meat grinder, mix with salt, pepper and cream. Press garlic cloves through a press and add to the stuffing.
Dice the onion into small cubes and remove to a sieve, pour boiling water
over
it. Dip the onions in cold water and then add them to the mincemeat.
Divide the dough into two parts, roll out the sheets no thicker than a couple of mm. Divide the
dough
into small circles, where we put the stuffing.
Seal the stuffing in the dough, mold the dumplings.
Boil the necessary portion of dumplings for 5-7 minutes after boiling. Do not forget to salt the water, add pepper and bay leaf.
We get tender homemade dumplings.
With this amount of ingredients, the volume of dumplings is about 2.5 kg.
