Lulia kebab is known by many people as one of the oriental traditional dishes. It is quite ancient, judging by the first mentions of lulia in history. For the first time the dish was cooked in the X century A.D.
In translation from the Persian language kebab means fried meat. And it is customary to cook lulia kebab exclusively from meat ingredients, without resorting to the addition of vegetables and other components.
Of course, over time, lulia began to cook in different ways

It all depends on the country where the meat dish is prepared. However, in Iraq they still adhere to the traditions of proper preparation of Kebab.
Let’s create our own lulia kebab in our kitchen.
Ingredients for lulia kebab:
- Ground beef – kg;
- Chicken fillet – 500 g;
- Onion – 3 pcs;
- Cilantro – 50 g;
- Tomatoes – 3 pcs;
- Tomato paste – 4 tbsp;
- Sugar – 2 tsp;
- Olive oil – tbsp;
- Dill – 10 g;
- Vinegar (9%) – ½ tsp;
- Vegetable oil – 80 ml;
- Salt – tsp;
- Pepper – tsp;
- Smoked paprika – 2 tsp;
- Cumin – tsp.
Preparation of lula kebab:
Cut chicken fillet and a couple of onions into small pieces, put them in a blender and chop. Add the meat and onion mixture to the ground beef.
Chop cilantro finely
and add
it to the minced
beef.
Pour salt, pepper, paprika and cumin into the mince, mix all the ingredients thoroughly and beat.
Leave the minced meat under a film in the refrigerator for 2-3 hours.
Remove the skin from the tomatoes, cut into slices. Put the tomatoes in a blender together with garlic cloves, tomato paste, sugar, salt and olive oil, whisk thoroughly to form a sauce. Chop
onions, chop dill, mix with vinegar and vegetable oil
.
Leave the onions to marinate for 10 minutes.
Form thick sausages from the minced meat. Fry them on a frying pan in vegetable oil until golden on both sides.
Serve lula kebab with marinated onions and sauce.
It turns out to be an alternative to ordinary cutlets.
