Cheesecake is one of the most recognizable cakes in the world. It is served in literally all restaurants and cafes. There are author’s cheesecakes, and there are simple well-known cakes.
People knew about cheesecakes in ancient Greece. There cooked cheese cake. It was made of grated cheese, flour and honey. The open pie was baked in the oven and then served to athletes. It was believed that such a cake helps to remove fatigue from the muscles, gives strength for future victories.
Now cakes are not associated with sports, on the contrary, are the opposite of this type of activity. But, this does not prevent people from preparing cheesecakes on a regular basis.
Ingredients for cheesecake:
- Savoyardi cookies – 200 g;
- egg yolks – 2 pcs;
- sugar – 100 g;
- juice of 1 lemon;
- cornstarch – 50 g;
- milk – 500 ml;
- white chocolate – 80 g.
Cheesecake preparation:
Divide Savoiardi cookies in half across, dip in milk. Place parchment on the bottom of the pastry mold, place cookies in milk on the sides.
Completely fill the bottom of the mold with cookies

It should not lie on the bottom, but rather stand horizontally.
Mix egg yolks with lemon juice and sugar. Pour the starch into the mixture and stir. Pour milk into the mixture, mix the components and pour into a saucepan
. On medium heat, stirring constantly, bring the cream to thickening. In the hot cream put pieces of white chocolate, melt and mix.
Put the cream in the mold with cookies, spread on the surface.

Leave the cake for 1-2 hours in the refrigerator until thickened and stabilized.

Once thickened, you can remove the pastry ring.

By the way, cheesecake can be turned into Tiramisu if you dip the cookies in coffee.
