Beet is considered one of the most beneficial vegetables for the human body. In Ancient times, beets were not used as a common vegetable for eating. Beets had a more important mission – they were a cure for many ailments. It wasn’t until later that people began to eat beets. Beets

were even sacrificed to the gods to placate them. This shows how beets were a valuable vegetable in ancient society.

After a while, the first doctors invented medicines, began to make tinctures from other plants, animal glands. Therefore, beets began to be used less often.

But, this vegetable is still indispensable, for example, for beet salads.

Ingredients for beet salad:

  • Beets – 2 pcs;
  • Salted cucumbers – 3 pieces;
  • Onions – 2 pcs;
  • Sugar – 1/2 tsp;
  • Ground black pepper – a pinch;
  • Parsley – a couple of sprigs;
  • Salt – ½ tsp;
  • Vegetable oil – 2 tbsp;
  • Mayonnaise – 2 tbsp.

Preparation of beet salad:

Boil or bake to readiness beets, peel and grate on a coarse grater.

Cut onions into small quarter rings, put them in a frying pan with vegetable oil and fry until lightly golden. Pour to the onion ground black pepper and sugar, stir and fry for 2-3 minutes.

While the onion cools down, grate pickled or salted cucumbers on a coarse grater. Put the cucumber mass to the beet.

Chop parsley, together with the onion, put it in a bowl with the vegetables. Fill the salad with mayonnaise, salt and mix thoroughly.
