Quick pies: puffy, even without yeast. With unusual fillings

Now it is safe to say that pies are included in the list of one of the most popular dishes for people. Recipes for different kinds of pies are found in both European, Asian and Oriental cuisines. In each culture, pies have their own sacred significance.

In ancient Rome, originally pies were not particularly edible. The dough for pies was used unleavened, in order to carry the filling.

Now it is impossible to imagine tasty pies without soft, fluffy dough. It must necessarily be either like fluff or thin.

Let’s create pies in our kitchen with the right puffy dough.

Ingredients of dough for pies:

  • Ryazhenka – 300 ml;
  • Flour – 360 g;
  • Starch – 40 g;
  • Sugar – 1 tsp;
  • Salt – ½ tsp;
  • Egg – 1 yolk;
  • Vegetable oil – 1 tbsp;
  • Soda – 0.5 tsp.

Ingredients for stuffing:

  • Curd – 300 g;
  • Egg white – 1 pc;
  • Sour cream – 2 tbsp;
  • Sugar – 2 tbsp;
  • semolina – 1 tbsp;
  • Pumpkin – 150 g.

Preparation of patties:

In a bowl with warm ryazhenka put the yolk, pour salt and sugar. Pour vegetable oil into the ryazhenka, whisk until homogeneous.

Combine flour and starch, gradually sift the bulk products into the ryazhenka. Knead the dough first with a mixer, and then with your hands on a table sprinkled with flour.

Form a thick cake on the table from the dough, sprinkle it with baking soda

Knead the soda into the dough, grease the colobock with vegetable oil.

Grease a container with vegetable oil, put the colobock there. Leave the dough to rise under a towel

. At this time prepare the filling – mix cottage cheese with sour cream, sugar and semolina. Grate the peeled pumpkin on a coarse grater, put it in the cottage cheese mass, whip the filling with a mixer.

In a separate bowl, whip the protein with salt for about a minute until the formation of a fluffy stable mass. Gradually add the whipped protein to the filling with a spatula.

Divide the dough into 10 equal rolls, cover with a towel and leave for a short period of time. Use your hands to make tortillas from the lumps, where you put a tablespoon of stuffing each.

Seal the stuffing in the dough and place the patties with the seams facing down. Heat vegetable oil in a frying pan – 300-400 ml.
