Lemon pies are considered to be a lesser known trademark of France. These pies used to be baked in March and were displayed in all the windows of bakeries and pastry shops in the country.

Ingredients for lemon pie:
- Egg – 3 pcs;
- Sugar – 140 g;
- Vegetable oil – 120 g;
- Yogurt – 100 g;
- Vanillin – 8 g;
- Lemon – pcs;
- Flour – 250 g;
- Leavening agent – 12 g.
Preparation of lemon cake:
Break eggs into a bowl, pour granulated sugar and beat the components with a mixer until a fluffy white mass.
Pour
vegetable oil into the mixture, add yogurt, continue to beat the products.
Pour vanillin into the mixture, grate lemon – sprinkle the zest on the surface of the egg mass. Squeeze the juice from the lemon and pour it into the mixture.
Whisk the ingredients again. Sift the flour and baking powder into the mixture in batches, beat with a mixer, turn into a homogeneous dough.
Cover the baking dish (diameter 28 cm) with parchment, pour the dough into it, spread an even layer.
Bake the cake at 180 degrees for 45 minutes.
For soaking, we recommend making a glaze of powdered sugar and lemon juice. This way the lemon cake will have a more intense citrus flavor.
