Korzhiki are familiar to many children who lived in the 1990s and 1980s. Mostly, this uncomplicated type of pastry was prepared in the canteens of kindergartens and schools. It was believed that korzhiki was a harmless dessert that helped children get a proper dose of glucose for brain function.
In 2000, korzhiki became harder to find in children’s educational institutions. The era of sweet miniature cakes is gone.
Now you can make your own flavorful shortcakes.
Ingredients for shortcakes:
- milk – 80 ml;
- sugar – 200 g;
- butter – 100 g;
- egg – pcs;
- salt – a pinch;
- vanillin – a pinch;
- flour – 400 g;
- leavening agent – tsp.
Preparation of shortcakes:
Pour milk into a saucepan, put it on the fire. Pour granulated sugar into the milk and heat until the grains of sand dissolve.
Take the milk off the heat, add butter to it.
As soon as the butter melts in the milk, mix the components thoroughly

Pour salt and vanillin into the mixture, break the egg and beat until homogeneous.
Combine the flour and baking powder, sift into the milk mixture in batches

Knead the dough first with a spatula and then with your hands.
Roll out the dough into a dough sheet about cm thick.
Use a cookie cutter or a glass to cut the
dough
into small circles. Transfer the circles to a baking tray lined with parchment.
Brush the cakes with egg yolk and make a diamond pattern on the surface with a fork.
Bake the cakes at 190 degrees until browned.
