Draniki is a type of fritters, which is cooked with the addition of a large amount of vegetable mass to the dough. Most often, the word draaniki refers to potato fritters. However, in addition to potatoes, there are zucchini or pumpkin draniki.
Fritters with vegetables are useful, as they absorb a lot of vitamins and minerals. And when frying, half of the useful still remains inside the cooked dish. Therefore, it is not worth refusing from draniki because of the stereotype about harmful food.
If you are tired of potato draniki, let’s make a variant of draniki from pumpkin.
Ingredients for pumpkin pancakes:
- pumpkin – 850 g;
- salt – ½ tsp;
- ground black pepper – a pinch;
- 25% sour cream – 4 tbsp;
- eggs – 3 pcs;
- seasoning for meat – tsp;
- dried parsley – tsp;
- cream cheese – 200 g;
- flour – 3 tbsp;
- breadcrumbs – 3 tbsp.
Preparation of pumpkin draniki:
Cut the pumpkin across into thin round plates, about 1-2 cm thick. Beat the surface of the pumpkin plates with a hammer, sprinkle with salt and ground black pepper.
Turn the pumpkin plates to the other side and similarly

and sprinkle with salt and pepper.

Put the pumpkin plates in a saucepan and pour boiling water over them.
Bring the pumpkin to a boil on medium heat under a lid and then cook for 2-3 minutes. After that, remove the pumpkin plates from the water and let cool slightly.

Grate the cheese on the small sharps of a grater. In a bowl break eggs, mix with sour cream, seasoning for meat, dry parsley, cheese and mix.

In a flat plate, mix breadcrumbs with flour.

Dip each plate of pumpkin in the breadcrumbs and flour mixture and coat in the egg mixture.

Heat vegetable oil in a skillet, fry the drainiki on both sides for 5-6 minutes on medium heat.

As a result, we have easy-to-make pumpkin pancakes.
