Pies with plums appeared in the culinary history of mankind a long time ago. However, they were able to make a sensation relatively recently, in 1983. The fact is that it was then that the first recipe for American plum pie was published in the New York Times. This recipe is still considered the most popular during the existence of the newspaper.

We will try to prepare an airy and soft plum pie in a frying pan.
Ingredients for plum pie:
- Eggs – 3 pcs;
- Kefir – 200 g;
- Sugar – 150 g;
- Butter – 80 g;
- Leavening agent – 10 g;
- Salt – ¼ tsp;
- Vanilla extract – 1 tsp;
- Flour – 250 g;
- Plums – 500 g.
Preparation of the plum cake:
In a pan with a diameter of 26 cm cover with parchment, which we grease with butter. Remove the pips from the plums and cut into large slices. Place the plums in a pattern on the bottom of the pan.
Break the eggs into a bowl, mix with sugar and salt and beat with a whisk. Melt butter, pour it together with kefir into the egg mixture. Add vanilla extract to the egg mixture, stir.
Combine flour and baking powder, sift into the egg mixture. Knead a thick dough, which we then spread over the plums in the skillet. Spread the dough in an even layer over the surface on the parchment.
Cover the skillet with a lid and cook on low heat for 25 minutes. Don’t forget to periodically remove condensation from the lid.
Cover the top of the pie with parchment and a plate. Carefully remove the pie from the pan and turn it over to the non-browned side. Cover the pie in the skillet with the lid and continue baking for 10 minutes.
You can check the readiness of the pie with a wooden skewer.
Before serving, the pie can be sprinkled with powdered sugar.
