Let’s tell you how to make zucchini pancakes at home.
Ingredients for zucchini pancakes:
- zucchini – pcs;
- potatoes – pcs;
- eggs – 3 pcs;
- milk – 100 ml;
- flour – 250 ml;
- leavening agent – tsp;
- green onion – bundle;
- parsley – a bunch;
- bacon – 100 g;
- vegetable oil – 2 tbsp;
- onion – pcs;
- salt – ½ tsp.
Preparation of zucchini pancakes:
Remove zucchini stalks and grate them on large grater cutters.
Mix the zucchini
and potato
masses together, salt and leave for 5 minutes to extract the juice. At this time, in a separate container break the eggs, add a pinch of salt and beat with a whisk.
Pour 50 ml of milk into the egg mixture, beat until homogeneous

Combine the flour and baking powder and gradually sift into the egg mixture.
Gradually add 25 ml of milk to the dough and knead. Put the vegetable mixture on a sieve and let the remaining juice drain out.
Then pour the vegetable mixture into the dough and mix. Pour the rest of the milk into the dough and mix. Chop green onions and parsley finely, add to the dough.
Pour vegetable oil into the dough, mix.
Cut bacon into small pieces, fry in a pan with vegetable oil

In a skillet with a drop of vegetable oil, pour a couple of tablespoons of batter, cook the pancake. Similarly prepare the rest of the pancakes.
Inside each pancake put the stuffing of bacon and onions, wrap with a triangle.
The stuffing can be excluded from this recipe or you can make your own author’s stuffing. You can also serve zucchini pancakes simply with sour cream.
