How many zucchini recipes do you know? Probably many will list zucchini caviar, zucchini rolls or grilled zucchini. However, the range of zucchini recipes is much wider than many may think.

For example, there are zucchini pancakes and fritters. There is also zucchini casserole. The vegetable is versatile, it is baked, fried and even pickled.

In addition to the above dishes, there is also zucchini pizza. This variation of the Italian cuisine turns out no worse than the original.

Ingredients for zucchini pizza:

  • Zucchini – 500 g;
  • Tomatoes – 2 pcs;
  • Eggs – 3 pcs;
  • Sour cream – 2 tablespoons;
  • Garlic – 2 cloves;
  • Flour – 6 tbsp;
  • Vegetable oil – 4 tbsp;
  • Cilantro – a bundle;
  • Parsley – a bunch;
  • Dried basil – 1 tsp;
  • Marjoram – 1 tsp;
  • Paprika – 1 tsp;
  • Salt – ½ tsp.

Preparation of zucchini pizza:

Grate zucchini on a coarse grater, removing the stalks in advance. Cut one tomato

into a

small dice, and the second half-ring.

In a bowl with zucchini mass break eggs, add diced tomatoes, chopped parsley and dill.

Pass garlic through the press, put to the zucchini mass along with sour cream.

Add marjoram and paprika

to the

mixture, salt the mass. Stir the ingredients until homogeneous, gradually pour the flour into the mixture. Make a thick dough.

Heat vegetable oil in a frying pan. Place the dough in the frying pan, level the surface. Carefully put tomatoes cut in half rings on the surface of the dough. Tomatoes can be salted to taste.
