Vegetable casserole is by no means the most popular dish among all possible casseroles. As a rule, people prefer meat casseroles, lasagnes. However, apparently not everyone knows about how delicious vegetable casserole can be. The

Ingredients for vegetable casserole:
- zucchini – 1.2 kg;
- onion – pcs;
- carrots – 2 pcs;
- sweet pepper – 2 pcs;
- salt – ½ tsp;
- dill – a bunch;
- garlic – 2 cloves;
- eggs – 3 pcs;
- milk – 200 g;
- olive oil – 30 ml;
- flour – 5 tbsp;
- leavening agent – 10 g;
- cheese – 100 g.
Ingredients for the sauce:
- yogurt – 100 g;
- mayonnaise – 2 tbsp;
- ground coriander – ¼ tsp;
- sweet paprika – 1/4 tsp.
Preparation of vegetable casserole:
Remove stalks from zucchini and cut into thin slices. Put zucchini slices in a bowl, salt to taste and mix.
Cut onion into half rings, heat vegetable oil in a frying pan. Fry the onion until soft.
Cut also peeled carrots into quarters. Put the carrots with the onions, fry for 5 minutes under a lid.
Clean the peppers from the insides, cut the peppers into thin slices

Put the chopped peppers with the carrots and onions, salt to taste. Fry the vegetable mixture under a lid for 5-7 minutes.
Remove the water from under the zucchini. Add zucchini to the vegetable mixture and cook under a lid for 5 minutes.
At this time, chop the dill. Press the garlic cloves into the vegetable mixture, stir. Grease a baking tray with olive oil, spread the vegetable mixture from the frying pan on the surface in an even layer, sprinkle with dill.
In a separate bowl break eggs, beat them with salt. Pour milk and olive oil into the egg mixture, mix.
Sift flour combined with baking powder into the egg mixture, knead a liquid dough.
Pour this dough in an even layer on the surface of the tray with vegetable mass. Grate cheese on a coarse grater, sprinkle the top of the future casserole.
Bake the dish in the oven at 200 degrees for 35 minutes. To prepare the sauce, mix Greek yogurt with mayonnaise, ground coriander and sweet paprika.
