It is difficult to count how many dishes can be prepared from zucchini. This vegetable is even capable of becoming a substitute for many other components. For example, it is possible to replace potatoes with zucchini or turnips.

Ingredients for zucchini in batter:
- Zucchini – 2 pcs;
- Eggs – 4 pcs;
- Salt -½ tsp;
- Dutch cheese – 90 g;
- Parsley – 6 g;
- Garlic – 2 cloves;
- Breadcrumbs – 90 g;
- Flour – 40 g;
- Black pepper – 1/2 tsp;
- Vegetable oil – 50 ml.
Preparation of zucchini in batter:
With a knife or fork make scars on the skin of zucchini, remove the stalks. Cut zucchini lengthwise into plates 5-6 mm thick.
Place each zucchini layer separately on the work surface, salt and pepper. Then turn to the other side and similarly salt and pepper.
Put the zucchini plates together and leave them under cellophane for 10 minutes. Then remove the water from the plates.
In a separate bowl, grate cheese and garlic cloves finely. Chop parsley and add to the cheese and garlic mixture along with the eggs.
Mix flour with breadcrumbs
. Heat 20 ml of vegetable oil in a frying

Dip the zucchini plates in the breadcrumbs and flour mixture and then dip into the cheese and egg mixture.
In a skillet under a lid over medium heat, fry the plates for 3 minutes. Turn the plates over with the fried side up, fry the second side similarly for a couple minutes.
Refresh oil after frying several batches of zucchini in batter.
