Ingredients for zucchini casserole:

  • zucchini – 4 pcs;
  • salt – ½ tsp;
  • onion – 2 pieces;
  • vegetable oil – 2 tsp;
  • carrots – pcs;
  • sweet pepper – 4 pcs;
  • eggs – 3 pcs;
  • milk – 300 ml;
  • olive oil – 30 ml;
  • flour – 5 tbsp;
  • leavening agent – 10 g;
  • dill – bundle;
  • cheese – 150 g;
  • mayonnaise – 2 tsp;
  • Greek yogurt – 3 tsp;
  • juice of ½ lemon;
  • green onions – a bunch.

Preparation of zucchini casserole:

Cut zucchini into half-rings, salt and leave in a separate container for 10 minutes. At this time, cut onions into half-rings, fry in vegetable oil in a frying pan.

Cover the pan with a lid, bring onions to softness on medium heat. Peel carrots, cut into half circles, put them on the onions. Cook the vegetable mixture under a lid over medium heat for 5 minutes.

Peppers are peeled from the insides, cut into small plates. Add the peppers to the vegetable mixture, salt to taste and stir. Cook the vegetable mixture under a lid for 7 minutes.

Squeeze zucchini from excess liquid, transfer to the vegetable mixture, mix the components. Cover the mixture with a lid and cook over medium heat for 15 minutes.

In a separate bowl break the eggs, pour the milk and thoroughly beat with a whisk. Add the olive oil to the mixture and stir.

Sift the flour and baking powder into the egg mixture and knead into a liquid dough. Finely chop the garlic and dill, transfer the garlic to the vegetable mixture 5 minutes before cooking in the pan. Dip

the chopped garlic into the batter, stir. Grease a baking tray with olive oil, place the soft stewed vegetables on the surface.

Pour the vegetable mixture on the tray with the dough, spread the mixture evenly over the surface. Shred cheese on large grating cutters, create a cheese cap on top of the future casserole.
