Sochen is one of the most popular flour products in the Soviet Union. It is a pie with curd filling, which is folded in half as if it were a flatbread. The filling in the pie can be open or closed.
In addition to sweet cottage cheese products, jujubes with meat and fish are also in demand. However, for the most part, it is the recipe with cottage cheese filling that people remember.

Ingredients of the dough for succini:
- Butter – 200 g;
- Egg – 3 pcs;
- Sugar – 170 g;
- Sour cream – 2 tbsp;
- Vanilla sugar – 10 g;
- Leavening agent – 10 g;
- Salt – a pinch;
- Flour – 500 g.
Ingredients for the filling:
- Curd – 500 g;
- Sugar – 2 tbsp;
- Egg – pcs;
- Sour cream – tbsp;
- Vanilla sugar – 10 g.
Preparation of succulents:
In a bowl combine eggs with vanilla and classic sugar, salt, mix thoroughly until the grains of sand dissolve. Add sour cream to the egg mixture, mix again.
Combine in a separate bowl flour and baking powder, chop cold butter on large cutters grated into flour, dip a piece into the flour. Grind the flour and butter into crumbs so that the butter does not have time to melt
. Combine the egg mixture with the
butter
crumbs, quickly knead by hand into an elastic and not sticky dough. While the dough is resting under food film, mix cottage cheese and sour cream.
Add sugar, egg and vanilla sugar to the filling, beat the mass with a blender until homogeneous. Separate ½ of the dough, roll out into a round layer about cm thick.
Using a glass, cut out smaller circles from the layer. Put a tablespoon of filling into these tortillas, fold the edges slightly.
Place the patties on a baking tray greased with butter

The same procedure of forming patties should be repeated with the second part of the dough.
Bake the
patties
at 180 degrees for about 35-40 minutes.
