Every year, people grow quite a lot of vegetables on their vegetable plots. Among the total number of vegetables are zucchini. The excitement in the urge to grow as many vegetables as possible is often associated with a shortage of products or a desire to save money.
However, after the zucchini harvest is gathered, many people wonder how to prepare them. The most banal recipe is zucchini caviar. However, in addition to this dish, there are more delicious and interesting methods of cooking zucchini.
Ingredients for zucchini casserole:
- zucchini – 4 pcs;
- thyme – ½ tsp;
- oregano – ⅓ tsp;
- tomatoes – 5 pcs;
- onions – pcs;
- dill – bundle;
- parsley – a bunch;
- ricotta – 200 g;
- garlic – 3 cloves;
- olive oil – 2 tbsp;
- parmesan – 60 g;
- mozzarella – 60 g;
- tomato paste – tbsp;
- sweet pepper –
- salt – ½ tsp;
- sugar – tsp.
Preparation of zucchini casserole:
Cut zucchini lengthwise into thin plates, no more than 8 mm wide. Grease a baking tray with olive oil, place the plates on the surface, salt and sprinkle with oregano and thyme.
Grease the zucchini plates again with oil, send them to the oven at 180 degrees for 15-20 minutes. At this time make cross cuts on the tomatoes, lay them out in a deep plate.
Pour boiling water over the tomatoes, leave them in the water for 5 minutes. In the meantime, you can finely dice the onions.
Heat olive oil in a frying pan, fry the onions on medium heat. Put the tomatoes in cold water for a minute, remove the skins and cut into small pieces.
Place tomatoes and onions in the pan, fry the vegetables together for 3-5 minutes under a lid.
Chop finely dill and parsley. Combine the greens in a bowl with the ricotta, a couple of garlic cloves pressed through a press and a couple of spoonfuls of olive oil.
Grate the Parmesan and mozzarella finely, mix and lightly salt. Add the cheese mixture to the bowl with the greens, stir to combine.
Add tomato paste to the skillet with the onions and tomatoes, mix, and salt to taste. Crush garlic into the tomato mixture, pour sugar, mix.
Grease a baking mold with 2 spoons of tomato mass, lay out several zucchini slices. Put cheese filling on the zucchini slices, spread it on the surface.
Lay out layers one by one – tomato, zucchini and cheese, until the fillings or slice are finished. Bake the dish at 180 degrees for 10-15 minutes.
Before baking, we recommend smearing the casserole with hot sauce and sprinkling with cheese.
