Delicious bacon is quite expensive in the stores. For 10 thin slices you sometimes have to pay as much as you might spend on a loaf of sausage. Bacon
in particular goes well with pasta Carbonara and scrambled eggs. Crispy pieces of meat with a layer of fat look very appetizing on the plate. Therefore, you need to learn how to cook your own bacon. So, after a couple of weeks, you can enjoy homemade budget bacon.
Ingredients for homemade bacon:
- brisket – kg;
- thyme – tsp;
- rock salt – 10 g;
- nutmeg – tsp;
- nitrite salt – 10 g;
- ground black pepper – tbsp;
- sugar – 10 g;
- dried garlic – 2 tsp.
Preparation of homemade bacon:
It is necessary to wash the brisket well, remove the veins and ribs, dry. Mix in a separate bowl thyme with nutmeg, classical and nitrite salt, sugar and ground black pepper.
Add the dried garlic to the spice mixture as well. Thoroughly rub the spices into the brisket fibers, skin and fat on all sides.
Pack the brisket in a bag, leaving a minimal amount of air inside. Place the meat in an additional bag and then place in the refrigerator skin side down.
Store the brisket in the refrigerator for 3 days, then turn the meat skin side up. Leave the brisket in this position for another 3 days.
Then take the brisket out of the bags and rinse well. Heat the oven to 85 degrees, wipe the meat dry with a towel. Bake the brisket for 3 hours, and the temperature of the meat should not be more than 70 degrees.
Cool the baked brisket, and then again pack it in a bag. We leave the future bacon for a week in the refrigerator chamber.
