“Herring under a fur coat” is one of the most popular and iconic dishes of Russian cuisine, which traditionally appears on holiday tables, especially on New Year’s Eve, birthday or other significant celebrations. This salad, in which each layer plays its own important role, combines simplicity and elegance, and is a perfect example of using simple ingredients to create a complex flavor ensemble. The
basis of the dish is salted herring, it is cut and placed on the bottom of the salad. It gives the dish a spicy and rich flavor. The next layer is boiled vegetables such as potatoes, carrots and beets. These ingredients not only add texture, but also contribute a sweetish flavor that contrasts beautifully with the salty fish.
Ingredients:
- Potatoes – 7 pcs;
- Carrots – 4 pcs;
- Beet – 4 pcs;
- Mayonnaise;
- Salt – ⅓ tsp;
- Onion – 2 pcs;
- Water – 100 ml;
- Vinegar – 9% – 30 ml;
- Sugar – 1 tsp;
- Herring – 150 g.
Preparation of salad “Herring under a fur coat”:
We lay out the beets in foil, and put the potatoes and carrots in a mold for baking. Bake the beets for 2 hours, and the rest of the vegetables for 1 hour at a temperature of 200 degrees C. Chop
finely onions, mix with salt, sugar, vinegar and water, leave to marinate for 10-15 minutes. Grate 3,5 potatoes on a coarse grater in a cooking ring, salt and smear with mayonnaise.
Put on the potato layer ½ of the marinated onions, and then cut ½ of the herring. Rub 2 carrots on the fish layer, smear with mayonnaise.
Rub 2 beets on the carrot layer, smear with mayonnaise. Then again lay out a layer of potatoes, onions, fish and carrots.
Divide boiled eggs into yolks and whites, rub the whites on the carrot layer, covered with mayonnaise. Put beet on the protein layer, smear with mayonnaise.

Leave the salad for a couple of hours in the refrigerator for soaking.
