Herring under a fur coat is one of the most popular and recognized New Year’s dishes in Russia and other CIS countries. This salad, consisting of layers of chopped ingredients covered with a tasty mayonnaise dressing, has become an integral part of the holiday table and evokes warm memories of family holidays and feasts.
There are several versions about the origin of this dish, but according to one of the most widespread theories, it was created in the middle of the XX century. The recipe is based on the simplicity and availability of products: herring, potatoes, carrots, beets and onions – all these ingredients were easy to find and save. Salad quickly gained popularity due to its taste and spectacular appearance.

Ingredients:
- Boiled potatoes – 2 pcs;
- Salt – a pinch;
- Mayonnaise;
- Herring fillet – 250 g;
- Green onions – a bunch;
- Cucumbers – 100 g;
- Eggs – 4 pcs;
- Melted cheese – 2 pcs.
Preparation:
Grate coarsely grated boiled potatoes and lay out the first layer in a salad bowl, cover with a mesh of mayonnaise. Cut herring into small cubes and put on the potato layer.
Chop green onions finely and put on herring. Dice the cucumber and put it on the herring layer.
Cover the cucumber layer with mayonnaise. Divide eggs into yolks and whites, grate yolks on a fine grater and sprinkle them on top of the cucumber layer.
Grate melted cheese on the yolk layer, smear with mayonnaise
