Pickled cucumbers have tightly entered the culture of our country and have become an integral part of many recipes.

Pickled cucumbers first became known in the XVI century

Then fresh cucumbers began to be brought into the country. At the court of Ivan the Terrible, the fresh vegetable was considered fresh and watery.

Until the XIX century cucumbers were pickled in large oak barrels

Later, this container was replaced by glass jars. Thanks to the replacement, cucumbers became available for canning to all housewives.

Ingredients for pickled cucumbers:

  • cucumbers – 500 g;
  • 9% vinegar;
  • bay leaf – pcs;
  • garlic – clove;
  • sugar – 1.5 tsp;
  • black pepper – 6 peas;
  • salt – 1.5 tsp;
  • allspice – 3 peas.

Preparation of pickled cucumbers:

Rinse the cucumbers well, especially if they are large in size. Long cucumbers need to get rid of the tips and “butts”, soak in water for a couple of hours.

In advance, sterilize glass jars. Move to the bottom of the bay leaf, black and allspice pepper, sugar, salt and a clove of garlic. Close the jar with the ingredients with a lid and let stand for a while.

In a saucepan pour 1.5 liters of water, add vinegar.

Adjust the amount of vinegar based on the parameters of the cucumbers – smaller vegetables will need less vinegar.

We recommend closing the door to the kitchen and opening a window to avoid spreading unpleasant odor around the apartment.

Heat the water with vinegar, but do not bring to a boil. As soon as bubbles appear on the surface of the liquid, move portions of cucumbers into the water. It is important that the vegetables go completely under the water.

Boil cucumbers should be cooked until they do not become similar to pickled. Small cucumbers are cooked for about a minute.

We transfer the finished cucumbers into a jar, pour steep boiling water and close the contents tightly with a lid. Do not forget to turn over and shake the container.

Tightly close the jars with cucumbers with towels, wait for the canning to cool down. If desired, you can add cloves, horseradish and other components to the pepper mixture in the jar.
