Pumpkin is a rather ancient vegetable native to Central and South America. It was cooked by ancient peoples, used even as a medicinal remedy. This is not surprising, since the pumpkin has quite a lot of useful components. For example, the vegetable has a lot of vitamins A, B, C and E. Also, pumpkin is rich in beta-carotene, which strengthens the immune system.

Pumpkin salad can be complemented with onions, pickled vegetables, legumes and meat. It turns out hearty, delicious and unusual.
The main thing is to make a good dressing for the salad. It is better to use homemade mayonnaise with spices. So pumpkin and other ingredients will acquire new flavor shades.
Ingredients:
- Pickled cucumbers – 3 pcs;
- Red onion – 1 pc;
- Boiled meat – 200 g;
- Canned beans – 150 g;
- Pumpkin – 300 g;
- Salt;
- Black pepper;
- Dried garlic;
- Italian herbs;
- Hot pepper;
- Mayonnaise.
Preparation of pumpkin salad:
Cut the peeled pumpkin into small cubes. Put the pumpkin in a pot, pour 800 ml of water, salt and cook after boiling for 20 minutes.
