Ingredients:

  • chicken breast fillet – 600 g;
  • chicken thigh fillet – 400 g;
  • table salt – 10 g;
  • 0.6% nitrite salt – 10 g;
  • sweet paprika – 1 tsp;
  • dried garlic – 1 tsp;
  • dry coriander – 1 tsp;
  • water – 100 g.

Preparation of homemade sausage:

Cut the breast fillet and thighs into small cubes, mix with table salt and nitrite salt. Leave the meat under cellophane for 24 hours in the refrigerator.

Part of the meat is chopped in a blender to the state of minced meat, pour to it sweet paprika, dry coriander, dry garlic. Put the minced meat to the rest of the meat, mix.
