Meatloaf can be a great substitute for meat pies. This type of pastry is similar to a classic pie, however, it is prepared in a different way. Meat filling is wrapped in a layer of dough, because of which the layers of dough are soaked with meat flavor and juice.
Such rolls appeared quite a long time ago, back in the days of antiquity. Rolls from unleavened dough with meat were a dish for the nobility, as not all ordinary people had money for meat. The first ways of preparing meat rolls were found in the cultures of ancient Greece and Rome. Later, the recipe migrated to other countries, where it began to transform. For example, in Italy, cheeses and herbs were added to the meat stuffing, and in Germany, an egg was added to the stuffing for nourishment.

They are prepared from different kinds of meat: from chicken to lamb and pork.
Let’s prepare a classic meatloaf
.
Ingredients for the dough:
- Flour – 500 g;
- Egg – 1 pc;
- Kefir – 200 ml;
- Butter – 200 g;
- Salt – 1 tsp;
- Leavening agent – 10 g.
Ingredients for the filling:
- Stuffing – 700 g;
- Chicken – 300 g;
- Onion – 1 pc;
- Salt – 1.5 tsp;
- Coriander;
- Black pepper;
- Paprika;
- Butter – 10 g;
- Vegetable oil – 2 tbsp.
Preparation of meatloaf:
Sift flour and rub cold butter into it on a coarse grater. Mix the butter with the dough, and then add egg white, salt, leavening agent and kefir
. Knead the dough with your hands, form a block. Put the dough in the fridge, keep
it
in cellophane while we prepare the filling. Chop
the onion finely, fry it until lightly golden in a mixture of vegetable and butter oil. Cut chicken fillet into small cubes, mix with minced meat and fried onions.
Salt the stuffing, add coriander, paprika and black pepper.

If desired, you can chop cilantro, parsley into the stuffing.
Divide the dough into 4 equal parts – for 4 rolls. Roll out each part into a thin rectangular layer.
Put the stuffing on each roll, on the edge. Wrap the stuffing in the dough, tucking the edges so that the meat juice does not come out of the roll when baking.

Place the rolls on a baking tray at a distance from each other. Brush the rolls with a mixture of egg yolk and milk and make shallow cuts along the entire length.

Bake the rolls at 180 degrees for 40-50 minutes.
