Soviet cooking gave the whole world a great variety of salads with an interesting concept and rich flavor. Each of the salads is unique, yet affordable due to uncomplicated ingredients. For example, such is the salad “Mimosa”.
This salad appeared in the 1960-1970s. Then the culture of preparing homemade salads was especially relevant. Along with “Herring under a fur coat” and “Olivier” salad “Mimosa” became very popular, it was prepared in every home.

The salad resembles a Mimosa flower due to the grated yolk on the top layer of the dish. In the past, this salad was more often prepared on March 8. But for New Year’s celebrations, it was and remains relevant, too.
In addition to the salad, the dish can be interpreted in different ways. For example, in the form of a roll. Let’s tell you how to prepare a roll “Mimosa”
Ingredients:
- Onion – ¼ pc;
- Apple cider vinegar 6% – ½ tsp;
- Sugar – ¼ tsp;
- Salt – a pinch;
- Boiled potatoes – 3 pcs;
- Boiled carrots – 120 g;
- Eggs – 3 pcs;
- Canned tuna – 100 g;
- Mayonnaise – 5 tbsp.
Preparation of roll “Mimosa”:
Onions cut into small cubes, pour vinegar to it, add salt and sugar. Stir the onion with vinegar and leave to marinate for 10 minutes.
Peeled potatoes and carrots rub on a coarse grater

Divide the eggs into yolks and whites,
grate the whites on a coarse grater. To form the roll, take a sushi mat or a thick towel or napkin. Put a layer of potatoes on the mat or napkin,

layer with mayonnaise and put carrots
on it
, not reaching 4 cm to the edge. Lubricate the potato layer with mayonnaise
. Put the squirrels and pickled onions on the carrot layer, lubricate with mayonnaise. Place a strip of tuna in the center of the layers.

Roll up the layers into a roll, fix the edges, put the roll in the refrigerator for at least 4 hours.

Then remove the food film from the roll, smear it with mayonnaise.
Grate the yolks finely and sprinkle them on the top of the roll. You can decorate the roll as you wish.
