Dumplings are a traditional Slavic dish that has a centuries-old history and is very popular not only in Russia, but also in other post-Soviet countries. Their name comes from the Komi Giryani word “pelnyan”, which means “ear”. Dumplings are small flatbreads of dough stuffed with meat or other fillings, and they are often cooked in broth or boiled in water.
The composition of dumplings can vary from region to region, but the classic version includes meat, and this can be a mixture of beef and pork, as well as the addition of spices and onions. In some regions, dumplings with mushrooms, potatoes or fish are popular.

Ingredients for the dough:
- flour – 1 kg;
- water – 350 ml;
- salt – 18 g;
- egg – 2 pcs.
Ingredients for stuffing:
- minced meat – 800 g;
- onion – 550 g;
- salt – 1.5 tsp;
- ground black pepper – ¼ tsp.
Preparation of dumplings:
Warm water mix with salt, beat eggs with a fork in a separate bowl. Make a hollow in the flour and pour in the salt water and egg mixture, knead the dough.
Gather the dough into a homogeneous lump and leave under cellophane for half an hour. Then knead the dough to a smooth texture and light stickiness, leave for another 30 minutes.
For the filling, chop 300 grams of onion in a meat grinder, the rest finely chopped with a knife. Mix the minced meat with the onion, add salt and black pepper, mix.
Divide the dough into two parts, roll each part into a small bundle

Divide the bundle into small pieces, dust them with flour and roll each piece into a small flatbread.
Put the filling into the flatbread and seal it inside the dough

Staple the opposite edges together. Boil the dumplings in boiling water for about 5-7 minutes.
