Ingredients for sponge cake:
- eggs – 5 pcs;
- egg whites – 2 pcs;
- salt – a pinch;
- sugar – 210 g;
- flour – 180 g;
- leavening agent;
- starch – 50 g;
- vegetable oil – 80 ml.
Ingredients for the custard:
- sugar – 100 g;
- vanillin;
- egg yolks – 2 pcs;
- starch – 3 tbsp;
- milk – 600 ml;
- butter – 180 g.
Cake preparation:
In a bowl, beat eggs with whites, salt and bring to a puffy white foam.
Gradually sift flour and baking powder into the egg mixture, pour in starch and knead a slightly liquid dough
.
Pour the vegetable oil into the dough and continue kneading. Pour
the dough onto a parchment-lined baking tray.
Bake the biscuit at 170 degrees for 25 minutes.
For the cream in a saucepan mix the yolks with sugar and vanilla. Add the starch to the mixture, pour in the milk and stir again.
Cook the mixture over low heat until thickened, stirring constantly. After boiling, cook the cream for 30 seconds and then remove from the heat.
Transfer the cream to a bowl, cover with cling film and leave to cool. In the meantime divide the biscuit into two thin cakes, cut across into 4 cakes.
Beat butter to whitening with a mixer, gradually add the custard base to it. Soak each cake in milk, smear with cream and assemble the
cake
.
Smear the top and walls of the cake with cream.
Leave the cake in the refrigerator for an hour.
You can make chocolate glaze for the cake by melting chocolate and butter in the microwave. This makes a soft, soaked, airy cake.
