Beans and vegetables in tomato sauce is just a perfect combination of flavors and aromas. The salad turns out delicious and hearty, it can be eaten as an appetizer in cold form or warmed up and you get a full-fledged second course.
For preparation you will need the following ingredients:
- tomatoes, 2 kg;
- beans, 450 g;
- salt, 2 tbsp;
- sugar, 1 cup;
- vegetable oil, 1.5 cup;
- carrots and onions, 1 kg;
- sweet pepper, 2 kg;
- hot pepper, 1 – 3 pcs;
- garlic, 1 head to taste;
- vinegar essence 70%, 2 tsp. or 9%, 80 g.
Cooking process
Boil the beans until tender without salt and leave them in water so that they do not dry out.
Tomatoes are chopped with a blender
. Sweet pepper is cut in pieces or straw
. Hot pepper is cut into small pieces.
Onion is cut into small cubes
. Carrots are grated on a coarse grater or on a grater for Korean carrots
.
Mix tomato sauce with salt and sugar, vegetable oil and bring to a boil
. Throw carrots into the tomato sauce, bring to a boil and cook for 10 minutes, stir.
Add sweet and hot peppers, boil
for 10 minutes. Add onions and cook for 10 minutes after boiling
. Pour vinegar essence, add beans, stir and add more chopped garlic
.
Tip: the amount of hot pepper and garlic regulate yourself, if you do not like spice at all, then do not add. To boil beans quickly, soak them overnight in cold water and then any beans will boil quickly.
Cook, stirring, taste and if necessary, add salt or sugar or vinegar.
Spread the salad in sterilized jars, screw on the lids

Turn the jars, wrap until cool.
Store in a poval or in the pantry

You can use the preparation as an addition to soup, borscht, vegetable stew, etc.
