Lemon pie is a dessert that has its roots in Europe, where lemons were available only to the rich. Accordingly, in the 18th century, lemon pie was popular only among the nobility and wealthy people. Over time, lemon pastry became available for ordinary people as well. The
pie was prepared in many countries of Europe and America. Each country had its own peculiarities of cooking this pie. For example, in England, lemon pie is prepared from crumbly sandy dough and lemon cream. In Italy, lemon pie is prepared with the addition of ricotta and lemon zest.
It can still be found on the menus of restaurants and cafes throughout Europe, but it is better to prepare it at home.
Ingredients:
- Eggs – 3 pcs;
- Salt – a pinch;
- Sugar – 180 g;
- Butter – 250 g;
- Vanillin – ½ tsp;
- Baking powder – 1,5 tsp;
- Flour – 550 g;
- Apple jam – 600 g;
- Lemon – 1 pc.
Preparation of lemon pie:
In a bowl with eggs pour salt and sugar, beat with a whisk until the grains of sand dissolve. Add butter to the mixture and continue mixing.
Pour 500 grams of flour, baking powder and vanillin into the mixture and knead an elastic and soft dough. Sprinkle the table with flour and continue to form the
dough
with your hands.
Leave the dough in cellophane in the refrigerator

At this time, cut lemon into small slices and whip in a mixer to the state of mush.
Do not forget to remove the seeds first.
Mix the apple jam with the lemon squash. Put the chilled dough on a table sprinkled with flour, form a loaf and divide into 4 parts.
While rolling out one of the parts, put the rest in the refrigerator

Transfer a layer equal to the area of the baking tray to its surface covered with parchment.
Remove excess edges, prick the surface with a fork. Bake each layer at 190 degrees for 7 minutes.
Smear each hot cake with lemon jam and place each cake on top of the other.
Make a fifth cake from the scraps, bake it in the oven and crumble it into crumbs.
Sprinkle the crumble over the pie and serve. This is an excellent lemon pie, which does not require deep knowledge of pastry skills.
