To cook fritters, you need to know some subtleties. Otherwise, they risk turning out thin, not puffy, rubbery. How to make lush, flavorful fritters?
First, it is worth using products at room temperature.
Secondly, the dough should be left to proof and then do not mix again. Otherwise, the puffiness of the dough will fly away, which affects the puffiness of the fritters.
Cook the fritters on a well-heated frying pan with the lid closed. This way the fritters will increase in volume.
Let’s prepare simple, but very puffy and soft fritters.
Ingredients for fritters:
- egg – 1 pc;
- kefir – 500 ml;
- sugar – 3 tbsp;
- salt – 4 g;
- flour – 400 g;
- vanillin – a pinch;
- baking soda – 1 tsp.
Preparation of fritters:
Warm up kefir to a temperature of 38 degrees. Beat the egg in a bowl, pour the kefir into it. Pour in sugar, vanillin and salt. Sift flour and baking soda into the warm kefir and knead a thick dough.
Leave the dough for 20 minutes under a lid

Heat a frying pan, pour in a little oil.
