Pancake Day is a pagan holiday that has been with the Slavs since antiquity. However, with the advent of the Christian faith, the people still did not forget about Maslenitsa. This pancake celebration became an auxiliary part for the beginning of the great Lent.

You can make this unpretentious flatbread in different ways. For example, on water, on milk, with kefir, soda and yeast. Fillings for pancakes are also different – from meat to fruit.
Let’s tell you how to cook thin cheese pancakes on milk.
Ingredients for cheese pancakes:
- Flour – 130 g;
- Sugar – 30 g;
- Salt – 4 g;
- Eggs – 2 pcs;
- Milk – 400 ml;
- Vegetable oil;
- Butter;
- Suluguni;
- Adygeya smoked cheese;
- Sour cream – tbsp.
Preparation of cheese pancakes:
In a deep bowl mix eggs, sugar, salt and flour in milk, thoroughly beat everything with an immersion mixer. If lumps remain, the dough is still thick, then whisk again.
On medium heat well heated skillet. Add a drop of vegetable oil to the skillet.
Scoop the batter with a ladle and pour a thin layer onto the pan. After the pancake has “grabbed”, you can flip it to the other side.
Be sure to stir the batter before scooping out, so that the flour does not settle to the bottom.
You can fry the pancakes not to a golden crust.
After frying, grease the pancakes with butter. Grate Suluguni and Adygea cheese on a coarse grater
. Add sour cream and a little melted butter to the cheeses.
Put the stuffing in the pancakes, on the more golden side and seal inside.
Put the pancakes on a griddle and lightly fry on low heat.
For a more subtle flavor, you can use Imereti cheese in the recipe.
It is recommended to eat the pancakes hot.
