The fact is that initially all dishes were prepared according to recipes from cookbooks of pre-revolutionary time. Fortunately for the Soviet people, cooks quite competently made the replacement of rare vegetables with familiar ones. One of the favorite root vegetables for salads was beets. It was believed that it had all the necessary flavor qualities for most dishes. In

Ingredients for beet salad:
- beets – 600 g;
- coriander – tsp;
- onion – 2 pcs;
- 9% vinegar – 2 tbsp;
- sweet pepper – ½ piece;
- sugar – tbsp;
- garlic – clove;
- salt – tsp.
Preparation of beet salad:
Beets need to be peeled from the peel, chopped on medium grater sharps. Combine the beet mass with salt, knead the mixture well with your hands. Leave the beets to give juice for 10 minutes.
During this period of time, cut the onion into quarter rings. The vegetable should be fried in vegetable oil until golden in color.
From the beets we drain the excess juice, add sugar, vinegar and coriander. After mixing the beets with the ingredients, it is necessary to integrate the chopped garlic clove and fried onions into the root vegetable.
Cut the sweet pepper into small slices, lay out to the beet salad. Cover the dish with food film, leave in the refrigerator for an hour.
