In Mexico, this pastry is called tortilla, in India – Roti. The principle of this bread product is simple – any filling is put in the baked layer. Actually, this is how Mexicans prepare Tacos. There is a similar way of cooking in Central Asia. Familiar to us shawarma is created approximately on the same principle

. However, in order to make a delicious dish, you should carefully select a flatbread. There are quite a lot of criteria for choosing this flour product. It is worth learning how to prepare flatbread yourself, so that you can be sure of the quality of this flour product.

Ingredients for flatbread:

  • flour – 250 g;
  • carrots – pcs;
  • semolina – 250 g;
  • onion – pcs.;
  • salt – 1.5 tsp;
  • turmeric – ¼ tsp;
  • water – 330 ml;
  • paprika – ½ tsp;
  • dry yeast – tsp;
  • ground black pepper – ½ tsp;
  • sugar – ½ tsp;
  • ground beef – 350 g;
  • vegetable oil – 30 ml.

Preparation of tortillas:

Mix flour with semolina and a spoonful of salt, separately combine yeast with granulated sugar. Pour the yeast with warm water, set aside the liquid for 5 minutes, create the opara. Pour opara into the depression in the flour, knead the dough.

Grease the formed block with 10 ml of vegetable oil, wait under the foil until the dough rises. In the meantime, fry the ground beef in oil in a frying pan.

Cut the onion into small pieces, add it to the mince and cook until soft. Grate carrots on medium shreds, put them into the mixture of onions and minced beef.

Salt, ground black pepper, paprika and turmeric are added to the stuffing, mix the components well. While the filling is cooling, knead the dough and divide it into 6 equal parts.

Cover the rolls with a towel and leave them for 5 minutes. Then roll out the koloboks into tortillas, where we put the stuffing.

Seal the stuffing in the dough as if it were sacks and leave the patties covered for another 5 minutes.

Roll out the patties into tortillas 4-5 mm thick and with a diameter equal to the size of the pan. Bake the patties on each side until browned on medium heat.
