There is a certain type of pastry bread that is often used to make various cakes and pies. This bread is sponge
cake, and there are many types of sponge cake available. For some cakes, a specific sponge cake recipe is used depending on the flavor preferences. For example, there are almost entirely chocolate sponge cakes.
In addition to pastry sponge cakes, there is homemade pastry dough. It has a simplified method of preparation. We want to show a recipe for homemade sponge cake for apricot pie.
Ingredients for apricot pie:
- eggs – 3 pcs;
- sugar – 150 g;
- salt – a pinch;
- vanilla sugar – 8 g;
- vegetable oil – 120 ml;
- milk – 150 ml;
- flour – 250 g;
- leavening agent – 15 g;
- apricot jam – 3 tbsp;
- coconut shavings – 100 g.
Preparation of apricot pie:
In a bowl break eggs, combine with salt, vanilla and classic sugar, whisk until homogeneous. Pour the vegetable oil and milk into the egg mixture, mix thoroughly.
Combine the flour and baking powder, sift in batches into the bowl with the egg mixture, knead the biscuit dough. Cover the baking dish with parchment, pour the batter into it.
Bake the biscuit at 180 degrees for half an hour. After baking, put the biscuit on a plate, smear with apricot jam and sprinkle abundantly with coconut shavings.
We end up with a soft sponge cake lightly soaked in jam.
It’s a sugary delicious cake for a tea party.
