Tiramisu is an Italian treat that has aristocratic origins. It cannot be compared to an ordinary delicate cake or pudding, such a treat is suitable only for special evenings.
The dessert got its name thanks to Venetian women who ate tiramisu before exciting dates. It was rumored that the dessert had arousing properties. Tiramisu translates as “cheer me up”, “lift me up”. There’s a certain amount of ambiguity in the interpretation. Earlier the dish was called “duke’s soup”.
Let’s try to prepare this wonderful dessert ourselves.
Ingredients for the cream:
- Sugar – 115 g;
- Vanilla sugar – 2 tsp;
- Cream 35% – 250 g;
- Egg yolk – 3 pieces;
- Mascarpone – 250 g;
- Gelatin – 5 g;
- Water.
Other ingredients:
- Savoiardi cookies – 200 g;
- Coffee – 400 ml;
- Cocoa powder – 1.5 tsp.
Preparation of Tiramisu:
First of all, let’s make the cream. Take gelatin and pour water over it. Leave it for a while to swell.
In a bowl combine the yolks with vanilla sugar.
Then cook the syrup, for this we combine water and sugar in a bowl
.
Heat over low heat until the sugar dissolves. Increase the heat and bring to a boil. After boiling, wait 2-2.5 minutes.
To check the readiness of the syrup, drop a small amount of liquid into cold water.
If you can make a ball out of the mass, the syrup is good.
Pour the hot syrup into the yolks in a thin stream, using a mixer at the same time. Next, at maximum speed whip the mixture for 7 minutes, so that the mass thickens and cools.
Return to the gelatin
.
Heat it and add one tablespoon of the resulting cream, stir. Now combine with the rest of the cream.
Knead the mascarpone cheese with a spoon to make it soft and pliable. Piece by piece, stir it into the cream. Stir with a spoon.
Pour the cream into a deep bowl and whisk. Add to the cream. Mix the ingredients, if necessary, add powdered sugar.
Proceed to the assembly of the dessert
.
For this we use cremains or other glasses of small size. The treat is quite nourishing, so make the portions small.
Savoyardi split in half and dip in cold coffee with or without sugar. Place on the bottom of the creme fraiche.
Next, make a layer of cream and again cookies. Alternate until we fill to the top. Sprinkle cocoa powder on top.
Send the treat to the refrigerator for one night. The dessert is ready, enjoy!
