Flatbread is one of the oldest dishes invented by mankind. Flatbreads existed long before the typical bread of our time. In fact, the flatbread is the ancestor of the loaf of bread
. Nowadays, Europe has moved away from the concept of cooking and honoring flatbread. Much emphasis is placed on ordinary breads, rolls and pies. However, in Central Asia, the basic bakery product is still the flatbread. There are a large number of different recipes for this bread. It is worth giving one of the ways to prepare zucchini flatbread.
Ingredients for zucchini flatbread:
- Zucchini – 1 pc;
- Hard cheese – 100 g;
- Eggs – 2 pcs;
- Salt – 1/3 tsp;
- Flour – 2 tbsp;
- Baking powder – ½ tsp.
Preparation of zucchini cakes:
Remove the stalks from the zucchini. If the zucchini is old, remove the peel and seeds as well. Young zucchini can be grated on a coarse grater together with the peel and seeds.
Squeeze the zucchini mass from excess liquid. Grate cheese finely, put it to the zucchini mass. Break eggs into the zucchini mass, salt, pour flour and baking powder, mix the components thoroughly.
Cover the baking tray with parchment. If you are not sure of the quality of your parchment, you can grease it with vegetable oil.
On the surface, place 1.5 tablespoons of zucchini mass. Round the portions on the tray, creating tortillas.
Bake the tortillas at 200 degrees in the oven for 20 minutes. Baking times may vary slightly.
The result is flavorful tortillas with a ruddy crust.
