The word pierogi comes from the root “feast”. That is, mostly meat pies, for example, were prepared on some holidays. For the most part, people ate vegetable and sweet pies, as their preparation was budgetary.
Since the XIX century, when people mastered the potato, potato baking became common. These pies were regularly fed to peasant families.
Now potato pies are also no less popular. It is worth giving a recipe for cooking simple potato pies.
Ingredients for potato pies:
- Kefir – 250 ml;
- Salt – 1 tsp;
- Egg – 1 pc;
- Sugar – 1 tsp;
- Vegetable oil – 30 ml;
- Flour – 400 g;
- Leavening agent – 1 tsp;
- Boiled potatoes – 400 g;
- Onion – 1 pc.
Preparation of potato pies:
In kefir break an egg, pour salt and sugar, mix thoroughly. Pour vegetable oil, flour and baking powder into the kefir and knead
elastic and not sticky dough

Cover the dough with cellophane and leave it for 15 minutes.
Boiled potatoes turn into mashed potatoes

Cut the onion into small cubes and fry it in a frying pan until golden. Mix the mashed potatoes and onions. If desired, you can chop dill into the stuffing.
Divide the dough into 12 rolls, roll into small tortillas
.
Put the stuffing into each flatbread, seal the mashed potatoes inside the dough.
Place the patties seam-side down, knead slightly.
In a frying pan in vegetable oil fry the patties on both sides until golden.
The patties can be prepared not only with potato filling. The dough is universal, suitable for both meat and egg filling
