Cutlets are considered one of the easiest dishes for a simple but hearty dinner. Cooking, as a rule, does not take much time.
These advantages of cutlets have been known since the days of Soviet canteens. Many different types of cutlets were cooked there – Moscow, Kiev, Pozharsky and others.
Thanks to Soviet cookbooks, a large number of isolated recipes became known. In times of scarcity from a small piece of minced meat could make quite a lot of cutlets. This trick is just shared in Soviet cookbooks.
We will cook a more modern version of cutlets, without rice and soaking bread.
Ingredients for cutlets:
- minced pork – 500 g;
- egg – 3 pcs;
- kefir – 250 ml;
- flour – 3 tbsp;
- salt -⅓ tsp;
- onion – pcs;
- ground black pepper – a pinch.
Preparation of cutlets:
Pour the minced meat in a bowl with kefir, add salt and ground black pepper, mix the components thoroughly until homogeneous. Cut the onion into small cubes, add to the meat mass.
Divide the egg into yolks and whites

Put the yolks into the minced meat, mix well. Sift flour into the meat mixture, mix the ingredients.
Pour a pinch of salt into the proteins, beat with a mixer to stable peaks. Put the protein mass into the minced meat, mix.
In a frying pan you need to heat vegetable oil, lay out the meat mixture with a tablespoon. Fry the cutlets on both sides on low heat for 3-4 minutes.
Transfer the cutlets to a saucepan, pour 100 ml of water over them. Stew the cutlets for 10 minutes also on low heat.
Serve these cutlets preferably with vegetables.
