Ingredients for cottage cheese muffin:
- eggs – 2 pcs;
- sugar – 100 g;
- butter – 70 g;
- cottage cheese – 200 g;
- flour – 160 g;
- leavening agent – 1.5 tsp;
- salt – a pinch;
- baking soda – a pinch;
- vanillin – a pinch;
- orange zest.
Preparation of cottage cheese muffin:
In a bowl, break eggs, pour granulated sugar and beat until fluffy and dissolve the grains of sand. Pour the soft butter into the lush mass, continue beating with a mixer.
Pour the cottage cheese into the mixture, stir. Pour part of the flour and baking powder. Add salt, baking soda and vanillin to the mixture, knead a homogeneous dough with a mixer.
Pour the rest of the flour and orange zest into the dough, continue kneading with a spatula or hands. Put the thick batter into a baking dish lined with parchment.
Bake the muffin at 180 degrees for 40-45 minutes.

Instead of orange zest you can use lemon zest.
