Ingredients for zucchini cutlets:
- zucchini – 350 g;
- carrots – pcs;
- eggs – 2 pcs;
- cheese – 100 g;
- parsley – bundle;
- potatoes – pcs;
- garlic – clove;
- salt – ½ tsp;
- black pepper – a pinch;
- Provencal herbs – tsp;
- paprika – ½ tsp;
- oat flakes – 4 tbsp;
- flour – 2 tbsp.
Ingredients for the sauce:
- sour cream – 2 tbsp;
- mayonnaise – tbsp;
- dill – a bunch;
- dried garlic – tsp;
- ground smoked paprika – tsp.
Preparation of zucchini cutlets:
Remove the stalk from the zucchini and grate it on a coarse grater. Sprinkle the zucchini mass with salt, squeeze out the liquid through a colander. Grate
carrots on a fine grater, shred cheese on a coarse grater. Break eggs into the zucchini mass, put cheese and carrots. Shinkuem finely parsley, grate the peeled potatoes on large shredders.
Put the potato mass and parsley in a bowl with zucchini mixture. Add to the mixture also a clove of garlic, pressed through a press, salt, black pepper, herbs and paprika.
In a blender, grind the rolled oats into crumbs. Pour the crumbled oats into the zucchini mixture, stir and leave for 15 minutes.
Heat vegetable oil in a frying pan and form small cutlets from the vegetable mixture. Dip the cutlets in flour, fry in the frying pan for 4-5 minutes on each side.
To prepare the sauce, chop dill, mix it with mayonnaise and sour cream. Pour dried garlic and ground smoked paprika into the sauce, mix.
