Varenyky is a dish consisting of boiled dough with a filling inside. Varenyky strongly resemble dumplings and manty.
It seems that varenyky is a Slavic traditional dish. However, there is an assumption that the first dumplings appeared in Turkey. They were pies made of boiled dough with stuffing. In the Ottoman Empire dumplings were called “dushbara” and were served in rich families for dinner.
Gradually dushbara became popular not only in Turkey, but also in European countries. Let’s prepare budget dumplings at home.
Ingredients of dough for dumplings:
- flour – 700 g;
- boiling water – 200 ml;
- salt – 1 tsp;
- vegetable oil – 3 tbsp;
- egg – 2 pcs.
Ingredients for stuffing:
- minced meat – 350 g;
- fresh cabbage – 1 kg;
- sauerkraut – 700 g;
- onion – 7 pcs;
- salt – ½ tsp;
- vegetable oil – 4 tbsp;
- water – 150 ml.
Preparation of dumplings:
Shinkle finely fresh cabbage and chop finely sauerkraut. Cut onions into small cubes and fry in a frying pan with vegetable oil until soft.
Add sauerkraut to onions, fry together and add 3 tablespoons of water. Add the shredded cabbage to the mixture, salt and continue to stew.
While the cabbage is cooling, prepare the dough

In a bowl with flour pour salt, beat eggs and pour vegetable oil, stir. Pour boiling water to the flour and knead gently with a spatula and then with your hands elastic soft dough.
Mix the cooled cabbage with minced meat

Divide the dough into small pieces and twist into thin sausages, which we divide into 12 pieces.
From each piece of dough form a small block, roll out small thin tortillas

Put the filling in the flatbread and seal the edges of the dough.
Boil the dumplings in boiling water for 5-7 minutes with bay leaf, pepper and salt.
Serve the dumplings with pieces of butter and sour cream.
