Royal vatrushka is a traditional Russian dish that occupies a special place in the country’s culinary culture. This delicacy is associated with centuries-old culinary traditions. The popularity of vatrushka does not fade with the passage of time.
Usually vatrushka is prepared from soft dough with various fillings, among which the most common are cottage cheese, fruit or jam. The
history of royal vatrushka goes back to ancient times, when baking from dough with filling was an integral part of Russian cuisine.
The name “vatrushka” comes from the word “vatra”, which in the Old Slavonic language meant “warmth” and “coziness”. This emphasizes the connection of this dessert with home warmth and family traditions.
Ingredients for the dough:
- Flour – 380 g;
- Butter – 250 g;
- Sugar – 100 g;
- Yolks – 2 pcs;
- Egg – 1 pc;
- Cream – 50 ml;
- Salt – a pinch;
- Vanillin – a pinch;
- Baking powder – 10 g.
Ingredients for the filling:
- Curd – 400 g;
- Sugar – 130 g;
- Vanillin – a pinch;
- Starch – 1 tbsp;
- Protein – 2 pcs.
Preparation of royal vatrushka:
Place soft butter in flour and grind until crumbly. Add sugar to the flour, mix, ¼ of the crumbs for decoration. Add
yolks and egg to the main part of the dough, mix. Pour cream into the mixture, salt, vanillin and leavening agent
. Knead elastic and soft dough, cover it with cling film. For the filling, mix cottage cheese with sugar and vanilla, add starch and proteins.
Beat all the ingredients until homogeneous with an immersion blender. Divide the dough into two parts, a larger and a smaller one.
Roll out the larger part with a rolling pin into a layer that will cover the bottom and sides of the baking dish. Place the dough in the baking dish, spreading it over the bottom and sides. Spread
the filling into the dough, spreading it over the surface.
Roll out the smaller lump of dough into a layer the size of the uncovered top of the patouche
. Divide the layer into small strips and place them on the cottage cheese filling on the patouche. You can lay the strips crosswise.
Then smear the strips with egg yolk and sprinkle with the leftover cream crumbs.
Bake the cake at 190 degrees for 40-45 minutes.
As a result, we get a delicious and flavorful vatrushka pie. This pie can replace even a cake, it is very sweet and tender.
