Zucchini cutlets are a delicious and healthy dish that can be a great choice for lunch or dinner. They are made from zucchini, which contains many vitamins and minerals such as vitamin C, potassium, magnesium and folic acid. Zucchini
is also rich in fiber, it helps digestion and can lower blood cholesterol levels. In addition, zucchini is low in calories, making it an ideal food for those watching their weight.
The cutlets can be served with sour cream, mayonnaise or other sauce to taste
Ingredients:
- zucchini – 2 pcs;
- potatoes – pcs;
- carrots – pcs;
- garlic – 2 cloves;
- eggs – 2 pcs;
- cheese – 100 g;
- flour – 5 tbsp;
- parsley – a bunch;
- salt – ½ tsp.
Ingredients for the sauce:
- Greek yogurt – 2 tbsp;
- mayonnaise – 2 tbsp;
- parsley – sprig;
- garlic – 1 clove;
- salt – ¼ tsp.
Preparation of zucchini cutlets:
Grate zucchini on a coarse grater, salt and leave the mass for 10 minutes. Peeled potatoes also grate coarsely, squeeze off excess liquid.
Break eggs into the potato mass, grate carrots finely
.
Press garlic cloves and finely chop, as well as parsley
. Put garlic and parsley to the potatoes, salt, sprinkle with your favorite spices: paprika, black pepper. Squeeze out all the liquid from the zucchini mass and put it into the potato mixture.
Mix all the ingredients and sprinkle the mass with flour. Stir the vegetable mixture with flour. Cut the cheese into rectangular bars.
Grease your hands with olive oil and form the vegetable mixture into small tortillas. In each flatbread put a block of cheese, seal it inside. Dip
the cutlets in flour, fry them in a frying pan in vegetable oil until golden brown on all sides.
For the sauce, combine sour cream and yogurt, chop parsley, grate a garlic clove.
Mix all the ingredients for the sauce and serve it with fried zucchini cutlets. The cheese inside the cutlets will stretch nicely, the cutlets themselves combine well with the stuffing and with the sauce.
