One of the most popular relatives of the pumpkin is the zucchini. It is more relevant to our country than a larger orange counterpart. From zucchini you can prepare many interesting dishes.
It is recommended to create culinary masterpieces from young zucchini, since neither preserve the flavor of the vegetable to a greater extent.
However, if the zucchini is beaten, then you should not use it in cooking. Most likely, it will quickly spoil and the dish will turn out unpalatable.
If you have a young or mature zucchini at home, let’s prepare vegetable cutlets.
Ingredients for vegetable cutlets:
- Zucchini – 2 pcs;
- Salt – 1,5 tsp;
- Carrots – pcs;
- Potatoes – 2 pcs;
- Black pepper – ½ tsp;
- Eggs – 3 pcs;
- semolina – 4 tbsp;
- Green onions – a bunch;
- Cheese – 100 g;
- Vegetable oil – 30 ml;
- Sour cream – 100 g;
- Garlic – 2 cloves.
Preparation of vegetable cutlets:
Grate zucchini on a coarse grater, add half a teaspoon of salt, leave for 10 minutes. Grate carrots on a fine grater, squeeze zucchini from excess liquid.
Peeled potatoes are also grated on a coarse grater and get rid of water. Mix the vegetable masses in one bowl, sprinkle with black pepper. Break eggs into the vegetable mass, mix the components thoroughly.
Pour semolina into the mixture, mix again, leave the mass under cellophane for 15-20 minutes. At this time finely chop green onions, grate cheese, add to the vegetable mixture, mix.
Form cutlets from the mass, heat vegetable oil in a frying pan. Under a lid on medium heat fry the cutlets until golden on both sides.
To prepare the sauce, we combine sour cream with garlic pressed through the press.
The result is delicious vegetable cutlets with sour cream sauce. You can also add chopped herbs to the sauce.
