flatbreads are a tasty and healthy dish that can be prepared in a variety of ways. They can be served as an independent dish or as an accompaniment to meat or fish. Zucchini flatbreads turn out soft and tender inside and with a crispy crust on the outside.

This dish can be supplemented with various sauces and spices to give it even more flavor.

Ingredients:

  • zucchini – 2 pcs;
  • salt – ½ tsp;
  • red onion – 1 pc;
  • carrots – pcs;
  • garlic – 3 cloves;
  • bell pepper – 2 pcs;
  • paprika;
  • garlic powder;
  • eggs – 3 pcs;
  • milk – 250 ml;
  • flour – 200 g;
  • leavening agent – 1 tbsp;
  • cheese – 150 g.
  • ketchup – 50 g;
  • mayonnaise – 50 ml;
  • soy sauce – 40 ml;
  • green onion – bundle.

Preparation of zucchini flatbread:

Using a vegetable peeler, cut the zucchini into thin long strips. Mix the zucchini with salt and leave for 10 minutes.

Cut the red onion into half rings, heat the vegetable oil in a frying pan. Fry the onion in the pan for 2-3 minutes.

Grate the carrots with a vegetable peeler in the same way as the zucchini. Put the carrot straws to the onions, fry for 2-3 minutes.

Chop garlic finely and add to the onions and carrots

Clean the peppers from the insides, cut into small slices and add to the pan.

Salt, sprinkle paprika and garlic powder on the vegetable mixture, mix and fry for 5-7 minutes. In the meantime, squeeze the zucchini from the liquid.

Combine the zucchini and roasted vegetables in a bowl. In a separate bowl, break and beat the eggs, salt,

pour the milk into the eggs and then pour in the flour and baking powder and knead the dough. Pour the dough into the vegetables, mix.

Cover a baking tray with parchment and grease with vegetable oil. Pour the dough with vegetables on the tray, spreading it over the entire surface.

Grate cheese on a coarse grater and sprinkle it on the top of the flatbread. Bake the flatbread at 180 degrees for 25-30 minutes.
