Airy and tender cheesecakes. Based on an old recipe from the 19th century

Syrniki is a dish of cottage cheese fried in a frying pan. They are popular in Eastern and Northern Europe and the Middle East.

In ancient Russia, cottage cheese was called cheese – hence the name of the dish. It is believed that cheesniki began to cook in pagan Russia. Then they were a ritual dish and symbolized the bounty of the land and fertility of livestock

. Over time, the ritual value has gone, and cheesniki became an everyday food. They were cooked in every family and served with sour cream and jam. Today, cheesecakes are prepared according to different recipes, with many additives. Let’s fry puffy and tender cheesecakes at home.

Ingredients for cheesecakes:

  • Fatty cottage cheese – 1 kg;
  • Eggs – 4 pcs;
  • Cream 30% – 3 tbsp;
  • Sugar – 4 tbsp;
  • Flour – 180 g.

Preparation of cheesecakes:

Mix in a deep bowl eggs with cream and sugar until the grains of sand dissolve. Add cottage cheese to the mixture, mix the components again.

To the cottage cheese mixture gradually pour flour, knead the dough for cheesecakes.

In a frying pan in vegetable oil fry the cheesecakes on both sides until browned.
