As soon as semolina appeared in our country, people immediately began to think about what they could make from it besides porridge. Since semolina resembles flour, cooks immediately realized that it could be used for baking. As a result, already in the XII century they began to prepare mannikin
, a type of baked goods that resembled a pie, but differed from this dish. Mannik was hearty and tasty, sweet. The bakery was perfectly combined with berries, so it replaced cakes for a long time.

Ingredients of berry mannik:
- black currants – 200 g;
- kefir – 250 ml;
- flour – 130 g;
- semolina – 170 g;
- sugar – 200 g;
- eggs – 2 pcs;
- vegetable oil – tsp;
- leavening agent – 10 g;
- salt – a pinch;
- vanilla sugar – 8 g.
Preparation of berry mannikin:
In a bowl, combine kefir with semolina, mix and leave the mass for an hour. In a separate container break the eggs, pour salt, vanilla sugar and granulated sugar, beat with a mixer at high speed for 7 minutes.
Add to the egg mixture swollen semolina, mix the components. Combine the flour and baking powder, sift into the semolina and egg mixture.
Mix the ingredients thoroughly, do not leave lumps

Cover the bottom of the baking mold with parchment, grease the walls with vegetable oil.
Spread the dough in the mold, spread it on the bottom. Wash currants berries, put them on top of the dough. Bake the mannikin in the oven at 180 degrees for 40 minutes.
After baking, cool the mannikin, sprinkle with powdered sugar. Instead of currants you can use other berries.
