The word “vatrushka” itself comes from the Old Slavonic “vatra”, which means “hearth, fire”. This is due to the fact that the shape of vatrushki resembles the sun or fire.
Vatrushki were popular in Russia in ancient times and were considered a symbol of wealth and prosperity. They were made of yeast dough with various fillings, such as cottage cheese, jam, jelly or poppy seeds. Vatrushki were served with tea and also used as a treat at festivals and rituals.
Nowadays vatrushki are not as much loved as they were at least 100 years ago. However, the traditions of preparing this pastry are preserved
. Let’s bake airy buns vatrushki by ourselves.
Ingredients for the dough:
- Yeast – 7 g;
- Sugar – 4 tbsp;
- Flour – 500 g;
- Salt – ½ tsp;
- Milk – 150 ml;
- Eggs – 4 pcs;
- Butter – 100 g.
Ingredients for the stuffing:
- Curd – 300 g;
- Raisins – 50 g;
- Vanilla sugar – 20 g.
Preparation of vatrushki:
Mix for the opara yeast with a spoonful of sugar, 4 spoons of flour. Warm the milk slightly, pour 50 ml to the yeast, mix and leave for 15 minutes in the heat.
At this time separate the whites from the yolks

Pour the milk into the opara, add the yolks and stir. Add the pieces of soft butter to the mixture, pour ½ of the flour.
Knead the dough and gradually pour the rest of the flour into it. Knead into a soft and slightly sticky dough. Leave it in the heat for about 1 hour, it is better to put it in the oven or multicooker.
Pour warm water over the raisins

Knead the finished dough on the table, divide it into 2 equal parts. Shape the dough into about 10 lumps.
For the filling, combine cottage cheese with vanilla sugar. In a separate bowl, whip the whites to a lush foam, pour into the cottage cheese mixture.
Cover the baking dish with parchment so that it covers the bottom and walls. Roll out the dough into small tortillas and put a spoonful of cottage cheese in the middle of each one.
Pinch the ends from opposite sides, creating a small petal of dough. Put another spoonful of filling in the middle.
Lay out the resulting wattrushki tightly to each other in baking molds.

Bake the vatrushki for 15-20 minutes at 180 degrees. You can also make vatrushki on a baking tray. It is enough to lay the rolls of dough on a baking tray covered with parchment and smear each with egg yolk
. We make a small cross cut with a knife, where we put the filling. Do not forget to sprinkle both versions of vatrushes with raisins.
