Eggplant appeared on our tables in the 17th century, but this product was mentioned in the history of the ancient Greeks and Romans. The Greeks did not like this fruit and nicknamed it the “Apple of Madness”. There were reasons for this: bitterness in the late stages of ripening and the harmful poisonous substance solanine. Hence the assumption that frequent consumption of eggplant causes rabies and insanity.
Of course, nowadays it is difficult to get poisoned by eggplant
.
Overripe fruits look gray-green or brownish-yellow, which is very different from the usual color of eggplant. The amount of the product eaten should be several kilograms. And as a result of selection, it was possible to get rid of even the bitterness of the original variety of eggplant.
Let’s prepare this vegetable as an appetizer for the table. We offer two variants of eggplant decoration at once. Both separately and on one dish they look impressive!
Ingredients for an appetizer:
- eggplants – 2 pcs;
- melted cheese – 2 pieces;
- tomato – pcs;
- garlic – 3-5 cloves;
- mayonnaise – 3-5 tablespoons;
- salt – tsp;
- black pepper;
- herbs, dill;
- vegetable oil.
Preparation of the appetizer:
One eggplant cut into circles with a thickness of 1 cm. Cut the second eggplant lengthwise, the thickness of the strips is 5 mm.
Prepared eggplant salt and rub. Let stand for 15 minutes. Then slightly squeeze from the juice and transfer to a saucer. Roll in flour on both sides.
Fry in a frying pan with vegetable oil.
For the filling, grate two melted cheeses
on a
coarse grater
.
Also grate garlic. Add 100 grams of mayonnaise.
Stir
the
stuffing
. On a strip of eggplant spread one teaspoon of stuffing. On the edges put greens.
Wrap into a roll. Do this with all the products.
Eggplant circles are also smeared with stuffing. Then put the tomato and cover with the second eggplant circle. Again smear with stuffing and sprinkle with herbs.
That’s how easy and simple we got two kinds of eggplant appetizers.
