One of the oldest cuisines in the world is the cuisine of the Transcaucasus, including Armenian cuisine. Culinary traditions of Armenia originate from ancient civilizations, which fascinates historians to this day
. For example, people in Armenia knew about many culinary processes long before Europeans. Cooks created dishes based on the knowledge of fermentation and pickling.
Most of the dishes of this cuisine remain unchanged. That is, they are prepared the same way as they were 2500 years ago. Let’s tell you how to prepare a traditional red pepper appetizer.
Ingredients for red pepper appetizer:
- red pepper – 4 kg;
- celery – a bunch;
- garlic – 2 heads;
- bay leaf – 3 pcs;
- black pepper – 20 peas;
- water – 200 ml;
- vegetable oil – 200 ml;
- vinegar 6% – 200 ml;
- salt – 30 g;
- sugar – 40 g.
Preparation of red pepper appetizer:
Remove the insides of the peppers, cut off the stalks. Wash celery, peel garlic cloves
. To prepare the marinade, mix water, vegetable oil and vinegar. Pour the mixture into a frying pan and heat over medium heat. Pour into the marinade salt and sugar, peppercorns, bay leaf.
Cut garlic cloves into small slices, put them in the marinade.
Also after heating in the marinade put the red pepper.
On each side fry the pepper for 2-3 minutes.
After the specified time, place the portion with the garlic on a plate. Fry the second portion of peppers and garlic in the same way.
Cut the celery into large pieces.
After roasting the peppers, remove the bay leaves from the pan with the marinade.
Put the celery and garlic in the pan, fry until the greens settle and change color.
Put the celery to the peppers in one bowl, leave to marinate for 24 hours.
If you want to save for winter, you can transfer the appetizer into a container and move it to the freezer. After defrosting, the flavor remains excellent.
If desired, you can fry hot green peppers together with celery. Then the appetizer will become sharper, will acquire a brighter flavor.
