Ingredients for the dough:
- flour – 300 g;
- baking soda – 2 tsp;
- powdered sugar – 100 g;
- vegetable oil – 100 ml;
- eggs – 2 pcs;
- lemon zest;
- apricots – 80 g.
Ingredients for the cream:
- milk – 300 ml;
- cornstarch – 2 tbsp;
- egg yolk – 1 pc;
- sugar – 3 tbsp;
- vanilla sugar – 1 tbsp.
Preparation Apricot Clouds cookies:
For the cream you need to combine 30 ml of milk and cornstarch, stir the mixture. Pour the rest of the milk into a saucepan, add the egg yolk, vanilla and classic sugar, bring to a boil
. After bringing to a boil pour the starch mixture into the milk, stir. Bring the cream to a thickening, remove from the heat and transfer to a separate container.
Cover the cream with cling film and leave to cool. For the dough, combine the flour with eggs, baking soda, powdered sugar, vegetable oil and lemon zest
and knead into an elastic, non-sticky dough
.
Divide the dough into 2 equal parts, send them in foil in the refrigerator for 20 minutes.
Then roll out a part of the dough into 5 mm thick sheets, divide with a glass into circles with a diameter of 5-6 cm.
Place the circles
on a baking tray lined with parchment.
Put the cooled cream in a pastry bag and squeeze it onto the dough circles. Dice the apricots into small cubes and place them on top of the cream caps.
Grate the second part of the dough onto the tops of the cookies with a coarse grater.
Bake the cookies at 200 degrees for 20 minutes.
After baking the cookies can be sprinkled with powdered sugar. It makes an extraordinary dessert for a tea party.
